Jerk Chicken with Rice and Peas Ft Daddy C's Hot Jerk Sauce

If you want a real taste of Jamaica in your home, this simple jerk chicken recipe is the perfect place to start. Using Daddy C’s Hot Jerk Sauce gives you deep flavour, real pepper heat, and that rich smoky-sweet taste that makes jerk such a classic dish. This recipe is easy to follow, great for families, and works well for both oven and barbecue grilling. Pair it with Jamaican rice and peas and fried plantain for a full island meal.

Ingredients

1 whole chicken cut into pieces (or 8 thighs)

1 cup Daddy C’s Hot Jerk Sauce

2 tbsp vegetable oil

1 tbsp brown sugar

3 cloves garlic minced

1 lime

Salt and black pepper to taste

Side dish: Rice and Peas

2 cups long-grain rice

1 can coconut milk

1 can red kidney beans (drained)

1 small onion, chopped

2 sprigs thyme

1 garlic clove smashed

Salt to taste

Instructions

1. Prepare the chicken
Rinse and pat dry. Place chicken in a large bowl. Season with salt, pepper, and lime juice. This helps tenderize the meat and adds bright flavour.

2. Add the marinade
In a separate bowl, mix 1 cup of Daddy C’s Hot Jerk Sauce with brown sugar, garlic, and oil. Pour over the chicken and massage gently. Cover and marinate for at least 2 hours. Overnight is even better.

3. Cook the chicken
For oven cooking:
Preheat to 375°F. Place chicken on a baking sheet lined with foil. Cook for 45–55 minutes until juicy and fully cooked. Broil for 5 minutes to caramelize the top.

For BBQ:
Heat grill to medium. Cook chicken on both sides until charred and cooked through. Brush more hot jerk sauce on top as it cooks.

4. Make the rice and peas
Add rice, coconut milk, 2 cups water, beans, onion, thyme, garlic, and salt to a pot. Bring to a boil, then cover and simmer 15–20 minutes until fluffy.

5. Serve
Plate the jerk chicken with rice and peas, add a few slices of fried plantain, and enjoy the real taste of Jamaica.
